Mardi Gras King Cake
One of the things I look forward to every year is when my Step Mom would gift me a King Cake for my birthday. It’s one of my all-time favorite cakes if you could call it a cake that is.
This sweet bread is covered in delicious icing and filled with a homemade strawberry jam. It’s a fun twist on the traditional King Cake for sure!
Mardi Gras King Cake with Strawberry filling
This recipe includes a small twist, that I just love to include in my cakes, a hint of strawberry. Even though this isn’t the exact traditional King Cake, it’s totally delicious and I highly suggest you give it a whirl.

Mardi Gras King Cake Ingredients
- flour
- sugar
- milk
- active dry yeast
- salt
- eggs
This special Mardi Gras King Cake is stuffed with a homemade strawberry filling. If you do not want to include the strawberry filling, please feel free to skip that step in the how to guide below.


How to Make the Dough
Combine milk and yeast in a stand mixer, let sit for a few minutes. With the dough hook attached and the mixer at a low speed, gradually add in butter, flour, sugar, and salt.
Raise speed and add in eggs, one at a time. Continue mixing until a sticky dough forms. Take the dough out and drop it onto a floured surface, knead, and then return to the mixing bowl. Cover with plastic and set in a warm spot for 1 hour. The dough will almost double in size.

How to make the strawberry filling
While the dough is rising, make your strawberry filling. Roughly chop 1 1/2 cups of strawberries, then cook on medium heat with 1 tbs sugar, stirring frequently, until you have a jam-like texture. Once the jam has your desired texture, remove it from the heat into a small heat-safe bowl, and set it aside to cool on the counter.


Adding the Filling and Rolling the Dough
Roll out dough into a large rectangle, then spread on a thick layer strawberry mixture with a spatula, leaving 2 inches on each edge free. Gently roll dough, making sure not to squeeze strawberries out as you go. Now you will need your bundt pan to transfer the dough into.

Bake the King Cake
Fold into a circle, and drop in a bundt pan with the seam side up. Take the bundt pan to the oven and bake as directed on the recipe card. Once the cake is fully cooked, transfer it to a wire rack to cool. While the cake is cooling, move on to making the homemade icing for the king cake.

How to Make the Icing
Make the icing by combining powdered sugar, milk, and vanilla. Whisk thoroughly until smooth. When the cake is cooled, drizzle icing along the top, and follow with Mardi Gras color sprinkles. See the next photo for what pattern you can follow.

Ingredients
King Cake
- 3 cups flour
- 1/4 cup sugar
- 2/3 cup milk
- 2 tbsp active dry yeast
- 1 tsp salt
- 2 eggs
Strawberry Filling
- 1 1/2 Cups Strawberries
- 1 tsp Sugar
- 2 tsp Corn Startch
Icing
- 2 Cups Powdered Sugar
- 2-3 Tbs Milk
- 1 tsp Vanilla
- Purple, green and yellow colored sugar or sprinkles
Instructions
- Combine milk and yeast in a stand mixer, let sit for a few minutes.
- With the dough hook attached and the mixer at a low speed, gradually add in butter, flour, sugar, and salt.
- Raise speed and add in eggs, one at a time. Continue mixing until a sticky dough forms
- Take the dough out and drop onto a floured surface, knead, and then return to the mixing bowl. Cover with plastic and set in a warm spot for 1 hour. The dough will almost double in size.

- Bake at 350 for 35-40 minutes.
- Once done, transfer to a wire rack to cool.
- Make the icing by combining powdered sugar, milk, and vanilla.. Whisk thoroughly until smooth.
- When the cake is cooled, drizzle icing along the top, and follow with sprinkles.
