Ingredients

  • 4 hard-boiled eggs, peeled and chopped
  • ripe avocado
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon or lime juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • ½ teaspoon smoked paprika
  • 4 slices of your favorite whole meal bread (whole grain, sourdough, or gluten-free)

Instructions

1. Prepare the Ingredients

  • Peel and chop the hard-boiled eggs into small pieces.  
  • Cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl.  

2. Mash the Avocado

  • Using a fork, mash the avocado to your desired consistency (smooth or slightly chunky).  
  • Mix in the lemon or lime juice to keep the avocado from browning.  

3. Combine  

  • Add the chopped eggs to the mashed avocado. Stir in Dijon mustard for added creaminess.  
  • Gently mix everything together and season with salt, pepper, and smoked paprika to taste.  

4. Toast the Bread

  • Toast the slices of bread until golden and crispy.  

5. Assemble the Salad Toasts
