  • 2 cups (about 120g) mixed salad greens (such as arugula, spinach, or baby greens)
  • 1/2 cup (75g) cherry tomatoes, halved
  • 1/4 cup (40g) red onion, thinly sliced
  • 1/2 cup (about 120g) goat cheese, crumbled
  • 1/4 cup (30g) walnuts
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground pepper

For the Vinaigrette:

  • 3 tablespoons (45ml) olive oil
  • 1 teaspoon (5g) Dijon mustard
  • 1 teaspoon (7g) maple syrup

Instructions

    1. Blanch the Asparagus:
