Fudgy Cheesecake Brownies Recipe

I absolutely LOVE these brownies, they are so thick and fudgy I had a blast eating them with the kids. We decided to warm our brownies up and eat them with a big scoop of vanilla bean ice cream.

It was mouth-watering good might I add! If this is your first time making brownies from scratch do not worry! This is a foolproof recipe that even my 7-year-old was able to help me make.

Ingredients

  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/3 cup vegetable oil
  • 1/2 cup boiling water
  • 2 cups white sugar
  • 2 eggs
  • 1 Cup of Semi-Sweet Chocolate Baking Chips
  • 1/3 cup vegetable oil
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • No Bake Cheesecake, Jello

Instructions

  1. Preheat oven to 350 degrees. Grease a 9×13 inch pan.
  2. In a large bowl, stir together the cocoa and baking soda. Add 1/3 cup vegetable oil and boiling water. Mix until well blended and thickened.
  3. Stir in the sugar, eggs, and remaining 1/3 cup oil. Add flour, vanilla, and salt; mix well. Spread evenly into the pre-greased pan.
  4. Bake in the preheated oven for 35 to 40 minutes. Let cool before cutting into squares.
  5. Prepare the No Bake Cheesecake mix, Serve the brownie with cheesecake on top then drizzle chocolate or caramel sauce. Add a scoop of ice cream and enjoy!
