Copycat Olive Garden Chicken Gnocchi Soup
One of my favorite things to eat at our local Olive Garen restaurant is their Chicken Gnocchi Soup. I can’t tell you how upsetting it is when I find out I’m just a little bit too late and they are out of my favorite soup for the day.
Since I seem to be just a little bit too late to enjoy my favorite soup, I figured I had to come home and make my own version, in my Magic Pot of course! In my version, I keep it classic. Yet if you are adventurous, you can mix it up and add some fried bacon bits as I suggest in the recipe card below.
Easy Chicken Gnocchi Soup
I have tested this soup out with my family and a few other family members and I think I nailed it! It is even better the next day when you eat it at work or in your own kitchen.
I love to add more spinach before I warm it up to give it that huge punch of spinach that I love. It’s super creamy and perfect for those cold winter days, or if your just craving some delicious creamy soup.
Chicken Gnocchi Soup Ingredients
This creamy flavorful soup recipe includes meat, fresh vegetables, cheese, heavy cream, chicken stock, and Gnocchi. Bump up this recipe by adding bacon! A quick savory spin to this delicious soup recipe that really bumps up the flavor!
Meat. The best meat to use for this recipe is chicken breast, however, you can use chicken tenders or thighs. (Optional: add bacon)
Fresh Vegetables. This copycat recipe includes ingredients you would see in the Olive Garden chicken gnocchi soup. Fresh carrots, spinach onions, onions, garlic, thyme, rosemary, and celery.
Liquids. This soup recipe calls for heavy cream, chicken stock, and cheese. Please feel free to switch out any of these ingredients with non-dairy or low-calorie substitutes. Please be advised the thickness of the soup will depend on the substitutions. See recipe notes for tips on how to easily thicken the soup.
Gnocchi. For easy quick dinners I like to use store-bought gnocchi, but please feel free to use what your family loves in this soup recipe.
Cooking The Chicken Gnocchi Soup
One thing I absolutely love about this soup recipe is that it’s made completely in the instant pot. This one-pot soup is a lifesaver during my busy weeknights.
After you have followed all of the recipe directions, seal the pot and cook it on the suggested setting and time. Do a quick manual pressure release and then follow the last steps. See recipe notes for helpful tips on how to thicken the soup to your family’s preference.
Instant Pot Chicken Gnocchi Soup Cooking Tips
- To thicken the soup simply add 2 tablespoons of corn starch with 2 tablespoons of water in a small bowl, mix well. Set pot to saute and then add the corn starch and water mixture. Boil the soup for about 3-4 minutes, or until you have reached your desired consistency.
- This recipe is fantastic with or without the fried bacon bits. If you want to add another level of flavor, try maple bacon bits. Hey! Don’t knock it till you try it.

Instant Pot Chicken Gnocchi Soup | Copycat Olive Garden
Bring the restaurant home with my Copycat Olive Garden Instant Pot Chicken Gnocchi Soup. Better than the restaurant, this deliciously easy to make creamy soup goes perfectly with fresh-baked breadsticks.
Ingredients
- 2 Chicken Breasts
- 2 Cups of Chicken Stock
- 1/2 Cup of Chopped Celery
- 1 Cup of Chopped Onions
- 3 Tablespoons of Butter
- Salt and Pepper to Taste
- 1 Teaspoon of Thyme
- 1 Rosemary sprig
- 3 Cups of Heavy Cream
- 1 Cup of Shredded Carrots (or minced Carrots)
- 1 Package of Gnocchi ( 1 lb )
- 2 Cups of Cut Spinach
- 1/3 Cup of Parmesan Cheese
- Optional: Thick Cut Bacon (4)
Instructions
- Set the Instant Pot on the saute setting. Add the olive oil and heat. Add the (optional) chopped bacon and cook until cooked thoroughly around 5 minutes. Remove Bacon and set aside.
- Add butter and let melt fully, then the onions and carrots and cook until the onion is slightly translucent, around 5 minutes more. Incorporate the garlic, celery, rosemary sprig, thyme, and cook until fragrant, around 1 minute.
- Add the chicken breast and pour the stock. Close the lid and valve and set on high pressure for 12 minutes.
- Manually release steam and open the valve and lid. With the help of two forks, roughly shred the chicken.
- Set the Instant Pot on the saute setting again. Add the spinach and gnocchi and stir to incorporate. Cook for 3 minutes. Add the heavy cream and parmesan cheese and cook for 1 more minute. *See notes for cooking tips*
- Enjoy with a warm piece of garlic bread, breadsticks, or with your favorite slice of bread. Enjoy!

I love this recipe! I have made it so many times already, “almost “ have it memorized, lol, I wish Made it one Christmas, we had gotten tired of the traditional Christmas dinner so we did a Soup one with 4 different soups, a little heavy on the thyme so since cut that back but it was a hit for sure! Now it’s my go to for just a great comfort meal. I’m a widow and live alone so I make a batch and eat it til it’s gone! Nummmm thank you for sharing!
