Vanilla Cupcakes With Strawberry Cream Cheese Frosting

Start your summer off with this delicious easy to make Vanilla Cupcakes with homemade Strawberry Cream Cheese Frosting. This was definitely a hit in my home, my kids loved both versions of the frosting and are still raving about them.

I love how light these cupcakes are but yet satisfying, although I’ve never been able to just eat one I’m sure you would enjoy tasting both versions as I did.

Vanilla Cupcakes Ingredients

  • Pillsbury Cake Mix
  • Substitute Milk for the water ingredient
  • Fresh Strawberries

Cut the Strawberries in whatever shape you would like, these are going on top of the cupcakes so they can look however you want them to look.

How to make the Vanilla Cupcakes

Make the Vanilla cupcakes according to the directions on the back of the boxed cake mix. I substitute the milk for the reccomended water ingredient in the recipe, to give the cupcakes a more moist texture.

Strawberry Cream Cheese Frosting Ingredients

  • 1 Package of Philadelphia Cream Cheese
  • 2 Teaspoons of Vanilla Extract
  • 2 Cups Powdered Sugar
  • 2 Tablespoons of Sugar-Free Strawberry Preserves
  • Your choice of sprinkles

Homemade Strawberry Cream Cheese Frosting

Mix in a separate bowl as you wait for cupcakes to bake. Blend with hand mixer 2 sticks of butter and 1 package of Philadelphia cream cheese until well blended. Add slowly 2 Cups of powdered sugar and 2 teaspoons of vanilla extract, mix well.

Add more powdered sugar or less powdered sugar until you reach the consistency you wish for. Add in two tablespoons of strawberry preserves until well blended.

How To Make Chocolate Cream Cheese Frosting

Heat 2 Tablespoons of butter in a sauce pan or frying pan. Pour half of the strawberry cream cheese frosting in a separate bowl. Add 1 Cup your choice of semi sweet chocolate chips. Cook on low heat and continue to stir until melted. Add this melted chocolate to one of the bowls of strawberry cream cheese frosting. Mix Well.

If you would like the mix to look darker simply use dark chocolate chips or melt more chocolate chips to the mix in the frosting.

Ingredients

  • Pillsbury Cake Mix
  • 1 Package of Philadelphia Cream Cheese
  • 2 Teaspoons of Vanilla Extract
  • 2 Cups Powdered Sugar

Instructions

  1. Mix Pillsbury Cake Mix (or your own choice of cake mix) together with ingredients listed on the back of the box. However! SUBSTITUTE the water for milk in this recipe.
  2. Spoon cake batter into cupcake pans and fill them halfway.
  3. Bake at 350 Degree’s for 15 Minutes. When finished pull and set on wire wrack to cool down.
  4. Cut Strawberries in whatever shape you want them to be.
  5. Mix in a separate bowl as you wait for cupcakes to bake. 2 sticks of butter and 1 package of Philadelphia cream cheese until smooth.
  6. Add slowly 2 Cups of powdered sugar and 2 teaspoons of vanilla extract, mix well. Add more powdered sugar or less powdered sugar until you reach the consistency you wish for.
  7. Add in two tablespoons of strawberry preserves until well blended.
  8. When cupcakes have cooled top them with a generous amount of strawberry cream cheese frosting then serve! Store them in your fridge for up to 3 days.
  9. Enjoy!
