Valentine’s Day Strawberry Red Velvet Cupcakes
It’s almost Valentine’s Day! What will you be giving your Valentine this year? Have you looked for the perfect gift? I know I am truly struggling with what to get some of my loved ones.
They are all so different and I’m sure they are tired of my classic card and chocolate gifts I usually give out around this time of the year. If you are struggling like me, how about you bake them up something special with this Strawberry filled Red Velvet Cupcake.
It’s topped with homemade ganache and ganache dipped strawberries with a white chocolate drizzle. Bake these up for Valentine’s Day party or just for your special Sweetheart.
Strawberry Filled Red Velvet Cupcakes
This year my kids will be giving out their own Valentine’s Day cards to their classmates. We went from homeschool to public school this year and it has been such a big change for us all. The one thing we weren’t really able to do when we homeschooled was hand out Valentine’s Day cards.
Easy Valentine’s Day Cupcakes
This year will be different and the kids are so excited. They have even marked the day on the calendar of when their Valentine’s Day Parties will be. I guess now my kids will be known for bringing in cupcakes like I was when I was in school.
I think the exception in our case is that I have to provide enough for 3 classes, YAY! I’m sure if I keep saying I think I can I think I can, those cupcakes will get baked!
Strawberry Filling Ingredients
- Fresh Cut Strawberries
- Sugar
- Butter
- Salt
- Orange Juice
- Flour
A fresh and easy strawberry filling recipe that goes great with all cupcake flavors. This easy to make strawberry filling for my red velvet cupcakes only uses 6 ingredients. Find all of your ingredients at your local grocery store or super market.
Making The Strawberry Filling
In a medium saucepan on low heat, melt the butter and sugar until they are completely combined. Now we will add in the orange juice (optional), flour, and cut up strawberries. Cook on this on low to medium heat for about 3-5 minutes stirring occasionally. Once they are nicely soft and tender, you will need to remove this from the heat and set aside to cool.
I like for my strawberries to be slightly soft but still have a small snap to them. Please feel free to cook down the strawberries to your own personal liking. Just add on a few more minutes and make sure you keep an eye on the sauce pot, stirring often.
Add the Homemade Strawberry Filling
It’s time to add the homemade strawberry sauce to our cupcakes, to start we will need a cupcake corer. However, if you don’t have one of those on hand you can use a sharp knife. Using the cupcake corer or sharp knife, cut a hole in the cupcakes, but save the tops! Add in the chilled or room temperature strawberry filling and then set the cupcakes aside again.
Chocolate Ganache
- 1 Cup of Heavy Whipping Cream
- 2 Cups of Semi-Sweet chocolate chips
A super simple chocolate ganache made with your favorite brand of chocolate. Using a double broiler method, bring 3 cups of water to a low boil. Add in the heavy whipping cream and heat it up till it’s just about boiling. When the cream is warm to the touch add in the chocolate chips and then stir till mixed.
Let the ganache sit for a minimum of 1 hour before using, this allows it to set. Pout the mixture over the cherry-filled cupcakes and then top them with chocolate-dipped cherries and sprinkles!
Strawberry Topping: Dip strawberries in the chocolate ganache and then set aside, melt the white chocolate in a double boiler method and then drizzle over the tops of the strawberries.
Red Velvet Cupcakes with Chocolate Ganache
To complete this cupcake I dipped fresh strawberries into the chocolate ganache and set them to dry while I filled the rest of the cupcakes. To make the white drizzle I just used some white chocolate melts I had, you can buy them from almost any food retailer.
I used the double broiler method and melted it down, then drizzles it over the strawberries. I topped my cupcakes with these chocolate dipped strawberries and threw on my kid’s favorite candy hearts. They turned out fantastic! I was able to refrigerate/freeze them without cracking the ganache, to keep them fresh for the kid’s Valentines Day party

- Bake Cupcakes as directed, but replace the water with milk as an ingredient, bake and then set aside.
Strawberry Filling

- Dip whole strawberries in the chocolate ganache and then set aside, melt down white chocolate in a double broiler method and then drizzle over the tops of the strawberries. Top your cupcakes with the strawberries and then serve.
